Tuna Avocado Salad

 

In summer, during these hot days (few or numerous depending where you live), we are all craving for a refreshing dish that would satiate your hunger while not leaving you bloated. The following recipe is one of these dishes. Avocado and tuna to quench your hunger. Lime and tomatoes to refresh you through their acidity. A failsafe simple recipe to enjoy on a summer lunch.

 

This recipe is for two medium servings.

 

INGREDIENTS
 
  • 1 ripe avocado

  • 2 roma tomatoes

  • 1 small can of tuna

 

Salad Dressing
  • 1 organic lemon

  • 3 table spoons of avocado oil

  • Chopped cilantro

  • Salt

  • Black pepper

 

 

 
DIRECTIONS

 

  1. Wash the tomatoes. Dice them. Peel the avocado and dice it. 

  2. Open the tuna can and drain it. Crumble the tuna using a fork in a bowl.

  3. Collect the zest of the lemons. Chop the zest very finely. Juice the lemon and collect the juice. Add the juice and the zest to the tuna in the bowl. Add the avocado oil. Add half a cup of chopped cilantro. Add salt and pepper to your taste. Mix thoroughly with a fork.

  4. Dress your salad in circles. On the outer circle put the diced avocado. Fill the middle with the tuna mix. Add on top the diced tomatoes in a circle. Add some salt and pepper to your taste.
