Pineapple Chow

At our local market here in Nova Scotia, Cavita is always looking for any tropical fruits that could be used to prepare one of her all-time favourite: Chow. The other day, we brought back a ripe pineapple to Lean Lifestyle kitchen...here we go :)

 

If you're not so much into pineapple but still would like to test taste Chow, try out our Mango Chow recipe. Chow can be made with any tropical fruit e.g Green Plum, Mango, Pineapple, Chenet , fivefinger or Carambola

 

This recipe is for 2 medium servings.

INGREDIENTS
 
  • 1/2 Pineapple

  • 1 Chili pepper to taste

  • 3 Cloves of garlic

  • 1 lime

  • Salt to taste

  • Black Pepper

  • Cilantro

DIRECTIONS

 

  • Peel and wash the pineapple. Slice into chunks.

  • Finely chop the cilantro and grate the garlic. Chop the chilli pepper (medium pieces if you want to be able to see it so that you do not eat it or finely if you want to eat it).

  • Mix  the garlic, pepper, cilantro, salt, black pepper in a large bowl with the pineapple and squeze the lime juice over it before tossing together.

  • Enjoy your spicy, juicy snack or save some for later in a mason jar.
