Haddock Ceviche
Inspired by Peru cooking, our Haddock Ceviche is a lime marinated haddock delicacy. Perfect to eat on its own or on top of some grilled bread and a nice white wine. It will provide you with a light and refreshing meal that will give all the energy you need for the rest of the day. A truly simple and magnificent way to celebrate the treasures of the sea ! The prefered type of fish for this recipe white & firm flesh sea fish like Haddock, Pollock or Halibut.

The ingredients are given for 4 medium servings.

1lb of haddock filet, de-boned

8 lime, juiced

25 cherry tomatoes, sliced

1/2 of onion, chopped

1/4 cup of coriander, finely chopped

3 tbsp of olive oil

Salt

Pepper

Cayenne pepper

Oregano

DIRECTIONS

Rinse your fish and dry it with paper towel. Dice it in small cubes and put in a bowl with a lid. Add to the bowl the juice of 6 limes. Using a fork, coat the fish dices with the lime juice. Close the bowl or container and put it to rest at least 6 hours in the fridge.

Wash and slice the cherry tomatoes. Peel and chop the onion. Wash, dry and chop the coriander.

Take out the fish from the fridge and drain the lime juice.

In a dish, put the fish, the juice of two limes, the chopped onion, the coriander, the olive oil and sald, pepper, Cayenne pepper and oregano to your taste. Stir the whole using a fork to make sure that the fish and the vegetables are coated with the spices.

Add the tomatoes and stir to coat the tomatoes with the juices. Service in a bowl or on top of a toasted bread immediately. You can keep this dish 1-2 more days in the fridge. Enjoy !
