Ginger Carrot Slaw

 

On a spring day, we decided that we wanted some healthy coleslaw. Except that on that same day, we didn't have any cabbage :( Here we were, embarking on a journey to create a lean cole slaw with what was in our pantry.

 

The recipe hereunder is the result and we are very proud of it as this Ginger Carrot Slaw is light, fresh, crunchy, flavorful and so simple to make !

 

This recipe is for 2 medium servings.

 

INGREDIENTS
 
  • 3-4 medium carrots

  • 1 large apple

  • 4 tsp of soy sauce

  • 1/2 of a lemon juice and its zest

  • A nub of ginger

  • Salt

  • Black pepper

DIRECTIONS

 

  1. Scrub and wash the carrots. Cut them in thin julienne (thin long sticks) using either a knife or a mandoline (if you have any).

  2. Wash and dry the apple. Peel the ginger. In a separate bowl, grate the apple (very finely this adds a sweet layer) and grate the ginger (very finely). Mix the soy sauce with the lemon juice and zest with your grated apple and ginger to make the dressing.

  3. Coat the carrots with the dressing. Keep in the fridge covered until eaten. Enjoy!
