DIRECTIONS

Directions for Baked Beans

  • In a hot pot (make sure the pot is hot first) add some olive oil and sauté the finely chopped onions, grated garlic and grated ginger.

  • Once softened and fragrant add the tin of baked beans, salt and black pepper to taste.

  • Cook for 5-8 minutes. Plate and add chopped chives for garnish.

Directions for Garlic and Herb Potatoes

  • Chop the baby potatoes in half and boil in water for 8 minutes with salt.

  • Drain and put in a large bowl.

  • Combine the baby potatoes with olive oil, salt, black pepper, garlic powder, chopped cilantro and chopped chili peppers. You can sprinkle some panko breadcrumbs here but this is optional, as the goal is just to create seasoned crunchy crumbs (and not bread the potatoes).

  • Spread the potato mixture on a baking sheet with the slices of red onions and garlic cloves. Drizzle some olive oil over the onions and garlic with some salt and black pepper.

  • Bake at 360 degrees fahrenheit for 20 minutes. Remove from the oven and mix, and then put the whole back in the oven to broil the potatoes until you obtain a golden top.
